Tasting Notes: Papaya - Passion Fruit Yoghurt - Citrus

Roast - Very light. Best rested 2-6 weeks but we have had good result 8-10 weeks post roast. 

Great on filter or modern espresso. 

At Villa Pastora, Yulieth carries on a family legacy as a third-generation coffee producer, working closely with her brother Gerson and their father Alvaro. The farm traces back to their grandmother, Pastora Anacona, who established it in the 1980s and introduced its first Typica plantings which is why the land still bears her name. Today, the Mora family's impact goes beyond their own harvests. They've become a key part of the local coffee network, opening up their processing setup to nearby growers by offering guidance on fermentation and access to drying infrastructure-helping others produce high-quality, speciality-level coffees.
